A Little Shot Of Heaven

I for one, like most ladies, am a huge fan of chocolate and my all time favourite liqueur is Bailey’s Irish Cream. When I discovered this tempting little treat which combines the two, I found myself in heaven! These chocolate shots are great for sophisticated soirees as they are beautiful in appearance and guaranteed to score you points in the culinary skills department! Even though they look tricky to make, they are actually very easy to put together when you use packaged chocolate cups. I won’t keep you in suspense any longer…the recipe to make 18 ‘shots’ is as follows;
Ingredients
1 cup heavy whipping cream
6 ounces chopped chocolate
1/3 cup of Irish cream liqueur (Bailey’s Irish Cream is the best option!)
1 package edible chocolate cordial cups
18 chocolate covered espresso beans
1 tablespoon fresh orange zest
Directions
1. Bring the heavy whipping cream just to a boil in a small saucepan, remove from the heat.
2. Whisk in the chocolate until smooth. Whisk in the liqueur.
3. Place in a medium size bowl and refrigerate for about 45 to 50 minutes until chilled but not firm.
4. Using an electric mixer, beat ganache until thick and semi firm. Stir in a pinch of fresh orange zest.
5. Fit a pastry bag with a size 6 round tip and fill with ganache.
6. Pipe ganache into chocolate cordial cups, fill almost to the top.
7. Place a chocolate espresso bean on top of the ganache and sprinkle with a pinch of orange zest.
8. Serve immediately or place in the fridge in a covered container until ready to serve.
Enjoy!
